Dark Souls - No-hit Challenge

My Dark Souls Experience

     I've started to play Dark Souls I: Prepare to Die Edition, a long time ago, on PC. I started to stream it as well. Facing a lot of technical issues, lag, camera bugs, controller bugs, I got very frustrated and gave it up. Later, Dark Souls Remastered came out and arrived like a sign for me to try this again. So I did.
     In early 2019, I started Dark Souls I Remastered. Thanks to Twitch chat, I had some nice support in the tricky moments, and some good advices, so I didn't have to google anything to wonder how things were working. Very grateful for that. And well...I absolutely loved it.

     Dark Souls is known for being a difficult game, but the lore, the exploration, the bosses, the monsters, the music and the whole charisma of the game completely seduced me. Once completed, I felt disappointed and sad. It was already over! But I continued right away with Dark Souls II: Scholar of the First Sin, which was... somehow slightly less interesting, but enjoyed it anyway. And finished the series with Dark Souls III which was an amazing gaming moment. I also covered all the DLCs. I have a few optional bosses missing here and there, but I'll go back to it someday. I have yet to kill Midir in Dark Souls III DLC.

     In the meantime, I've been discovering various streamers and youtubers that play Dark Souls on a different levels: completing challenges. While speedrunning this game do not interest me that much, I thought the no-hit challenge was more my type. It felt a little closer to NLNMAS challenge that I completed for various Tomb Raider games. And so started my journey.

     Obviously, I had completed Dark Souls only once...so my knowledge was, and still is, very limited. I do not know all the weapons, I still get lost, I don't remember areas, names, etc. So I've got a lot to learn to progress, but I enjoy it. It will probably take some time, but it's a nice journey.

The No-hit Challenge

     This challenge is apparently quite "unofficial". There are no strict rules, more like...unspoken rules. After a quick research, I found my way to this website, and was able to set my goal and rules. It displays only tips for Dark Souls III and since I'm new to this, I'd rather start with Dark Souls I.
     I am still working on the path I'd like to choose, my strategy, my weapons...and just git gud overall, but here's my plan:

What is allowed:
- Every weapon, ring, armor.
- Parrying with a shield.
- Using a shield to benefits from its passive effects.
- Fall damage is allowed, unless you die from it.
- Throwing knives and bombs.
- Killing bosses in any order.
- Any Soul Level, any stats.
- Go to the menu to reset mobs.

What is NOT allowed:
- Getting hit.
- Blocking with a shield.
- Using glitches.
- Using spells.
- Summoning a player/NPC.

About a "hit":
- Any damage/stagger caused by an enemy is a hit.
- Being hit by a projectile is a hit.
- Any AoE attack is a hit.
- If an enemy falls on the player, it's a hit.
- Blocking an attack with a shield is a hit.
- Environment damage is NOT a hit: lava damage, poison damage.
- Traps/darts are considered as a hit.

Objective 1 = Learn the game and all its secrets!
Objective 2 = No-death runs.
Objective 3 = No-hit runs.

My Strategy

     This section is purely informative, mostly for myself. I'm testing my way through, weapons, strategies, etc. I tend to forget things very easily when it comes to this, so I write everything down. It is not final and may change. If you have any suggestions, ideas or any ways to help me, please leave a comment below. It's greatly appreciated.

= Bonfire

Weapons:
1) Halberd +5, then Halberd +10
2) Grass Crest Shield = Increase Stamina recovery.
3) Bow/Arrows

Items:
1) Red Tearstone Ring = Damage increased when HP is low.
2) Homeward Bone = Tp back quickly to bonfire.
3) Lloyd's Talisman = To put Mimic to sleep & look Symbol of Avarice (luck based).
4) Large Ember + Very Large Ember = To upgrade weapons, first in Sewers, second in New Londo.
5) Firebombs = To kill Capra Demon & Bed of Chaos "balls". ;)
6) Titanite Shards = To upgrade, buy at Andre (Undead Parish).
7) Large Titanite Shards = To upgrade, buy  at Crestfallen Merchant (Sen's Fortress).
8) Transient Curse = Kill ladies in New Londo.

Tutorial + Asylum Demon
0 • Setup
     ◘ Firelink Shrine: Pick Humanities, Homeward Bones + Lloyd's Talisman.
     ◘ New Londo: Sit at Forest , go to dragons, pick up Red Tearstone Ring, tp to .
    ◘ Forest: Kill Black Night (if possible), pick Grass Crest Shield, pick Bow/Arrows, Souls, open the door, kill Crystal Bug, go to Andre.
     ◘ Undead Parish: Sit at , go pick Halberd, tp to . Buy 8 Titanite Shards, Halberd to +4 & get Arrows. Kill guardian in Church, +1 Titanite Shard, Halberd to +5. Unlock elevator, go back to Firelink Shrine.
     ◘ New Londo: Get Transient Curse, cross New Londo, reload game at the bridge. Kill Ingward, get the Key to the Seal, go flush, reload game. Go pick Very Large Ember (+10 to +15), tp to .
     ◘ To Castle: Skip dragon, rush to vendor, get Firebombs x27 (1350s) + Lloyd's Talisman x3 (1500s), jump to Capra Demon, kill mobs, set up for boss:
